Creamy white with a fibrous texture. Coated with mint to add character and flavour. Delicious fried in a little olive oil. Should be heated to reveal it's true character. Wonderful added to salads. Silver Medal Winner in NZ Cheese Awards 2009.

Attractive squeaky texture, minimal salting and clean tasting and very satisfying.
