Peter Timbs won silver in the same category in 2008, but took out the top prize in 2009.  They cure and smoke their meat over a period of a week, using a special recipe that has been in the family since 1876.  They make minor adjustments occasionally to make sure they get the perfect taste, texture and versatility from their bacon.
