Diced White fish with Brinjal Chutney
Poach fillets of snapper, John Dory, blue cod, orange roughy or monkfish. Drain the pan. Remove the fish and dice into large cubes, then return to the pan with a generous slurp of Zoe's Brinjal Chutney. Toss to coat the fish cubes in this very yummy chutney.
Serve with tomato & avocado diced salad.
